Cocoa mass (also called cocoa paste or chocolate liquor)
Cocoa mass is made by grinding roasted cocoa beans into a thick, smooth paste. It’s essentially pure chocolate in its raw, unsweetened form.
How it’s made:
- Cocoa beans are fermented, dried, and roasted
- The shells are removed, leaving cocoa nibs
- The nibs are ground into a liquid paste → cocoa mass
Key characteristics:
- 100% cocoa (no sugar added)
- Bitter, intense chocolate taste
- Solid at room temperature
- Used as a base for making all types of chocolate
How it’s used:
- Mixed with sugar → dark chocolate
- Mixed with sugar + milk → milk chocolate
- Separated into:
- Cocoa powder (after removing fat)
- Cocoa butter (the fat portion)
